Grilled portabella mushroom and goat cheese sandwich. "Makes two sandwiches" 

1 tbls olive oil
1 red onion 
1 tbls brown sugar 
1 tsp chili paste (or dried chili pepper flakes)
2 large portabella mushrooms 
1 clove garlic 
1 tbls vegan worcestershire sauce
1 lemon juiced 
1/4 cup mayonnaise 
1/4 cup goat cheese 
pinch of fresh thyme 
1/4 cup fresh spinach 
chapati bread (or any good hard crust bread)

First remove the "fins" and stem from the mushrooms then marinate in the vegan worcestershire sauce, olive oil, and garlic. Then add the olive oil to the skillet and heat. Add the onions, brown sugar and caramelize the onions. Just before the onions are done add the chili paste then put aside. Grill the mushrooms until done "you can pan fry them if you want" then cut into strips. Combine lemon juice, mayonnaise, thyme,  and garlic mix well with fork or whisk. Now add the mushrooms, onion mixture, mayonnaise, cheese, and spinach on the slices of bread and wrap tightly in aluminum foil. Place sandwiches back on grill, at medium heat 3 mins on each side.
