Buffalo Chick'n Seitan Wings


Seitan:
1 cup vital wheat gluten
2 Tbsp chickpea flour
1 Tbsp nutritional yeast
1 Tbsp Vouge brand vegetarian chicken style base
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground ginger
1/4 tsp white pepper
1Tbsp vegetable oil
1 cup water


Batter mix:
1 cup all purpose flour
1/2 rice flour
1 Tbsp black pepper
2 tsp salt
1 Tbsp chili powder
2 Tsp ground cumin


1 cup Silk or milk
Buffalo sauce and blue cheese or ranch dipping sauce


Mix seitan ingredients in a large bowl. Knead it about one minute. Let rest a few minutes. Form into a flat square and add to 8x8 baking dish lined with aluminum foil that has been sprayed with non stick cooking spray. Bake in oven at 350 for 45 minutes. 


After you remove from oven cut into bite size pieces.  Dredge pieces in Silk and then coat in dry batter mix. Fry in deep fryer or pan fry. Remove from fryer and place on paper towel to remove excess oil. Serve with buffalo sauce and blue cheese or ranch dipping sauce.
