Aunt Fanny's Baked Squash, Nanny's Macaroni and Cheese, and Collard Greens with Cornbread
Aunt Fanny's Baked Squash
3 lb summer squash
1/2 cup diced white onion
1/2 cup bread crumbs
2 eggs
2 Tbsp butter
1 Tbsp sugar
1 Tbsp salt
1/2 tsp black pepper
Slice squash into 1/4 inch thick slices and boil until tender. Drain squash and mix together with onion, 2 eggs, sugar, salt, black pepper and 1 Tbsp melted butter. Pour mixture into baking dish. Sprinkle the bread crumbs on top and pour 1 Tbsp melted butter over the crumbs.
Bake at 350 for 45 minutes
Nanny's Macaroni and Cheese
2 cups dry macaroni noodles
2 cup shredded cheddar cheese
1 egg
1 cup milk
Boil noodles according to directions on box. Drain noodles and add to large baking dish. Mix half of the cheese into the noodles. Whisk together egg and milk. Pour mixture over the noodles to almost cover.
Bake at 350 for 30 minutes. Remove from oven and add remaining cheese to top. Bake for an additional 15 minutes.
Collard Greens
1 bunch fresh collard greens throughly washed, de-stemmed and chopped
2 small white onions rough cut
3 cloves garlic
Salt and pepper to taste
Add ingredients to large pot and cover with water. Bring to boil. Then reduce heat to simmer. Cook for one hour or until tender.
