Feeling a bit under the weather this week so wanted to make some comfort food. This is a thick hardy soup.
For the Soup:
- 1 white onion chopped
- 1 cup chopped carrots
- 1 clove garlic minced
- 1 celery stick cut in half
- 1 bay leaf
- 1/2 tea spoon poultry seasoning
- 1/4 tea spoon cumin
- 1 Tbsp liquid amino
- salt and peper to taste
- 2 cups water
- 4 cups no-chicken broth
For the Dumplings:
- 1 cup all purpose flour
- 2 tea spoons baking powder
- 1/2 tea spoon salt
- 1 Tbsp butter
- 1/2 cup milk
Saute the onions until translucent. Then add garlic and carrots, and cook for an additional 3 minutes. Add the broth and water, and bring to a boil. Reduce heat to simmer adding celery, bay leaf, poultry seasoning, cumin, liquid amino, salt and pepper. Cover and cook for 30 minutes. Meanwhile mix all of the ingredients for the dumplings together to form a dough. Remove bay leaf and the celery stick halves. Drop spoonfuls of dough into the soup and cook for another 20 minutes.
