Easy Cinnamon Shortbread Cookies

We don't bake a lot but around holidays suddenly baking cookies sounds like a great idea. This is a very simple recipe. The hardest part is rolling out the dough but just do it in small batches and use lots of flour on your surface and rolling pin. We tried making different shapes this time but the best ones turned out using a square ravioli punch and a tree cookie cutter we bought for a dollar at world market.

For the cookies:
Add the butter to a large mixing bowl and allow to soften by leaving at room temperature for a few minutes.  When butter has softened mix in the other ingredients. Mix with your hands to form the dough. Roll out the dough on a floured surface and punch out designs with cookie cutters or everyday kitchen items like the rim of a glass. Lay cookies on a greased baking sheet and preheat oven to 350. Bake cookies for 10 to 15 minutes.
