- 1 cup vital wheat gluten
- 1 tbsp nutritional yeast
- 1 tbsp chickpea flour
- 1 tbsp dried mince onion
- 1 tea sp caraway seeds
- 1 tbsp liquid smoke
- 1 tbsp liquid aminos
- 1 tea sp oregano
- 1/2 tea sp cayenne pepper
- 1/4 tea sp garlic powder
- 1/4 tea sp salt
- 1 tbsp vegetable oil
- 3/4 cup water
You will also need two delicata squashes. Cut them in half long ways and scoop out the seeds. sprinkle with olive oil, fresh thyme, salt and pepper. Use an aluminum foil lined 8x8 baking dish. Bake at 350 for 35 minutes. This can be done at the same time as the seitan sausage.
For the squash stuffing:
- 2 cloves garlic chopped
- 1 white onion diced
- 2 cups chopped mushrooms
- chopped seitan sausage you just prepared
- 1/4 cup grated hard cheese for topping
