This is a veggie copycat version of Steak and Shake's Frisco Melt sandwich. Not sure how it got its name the only thing really San Franciscan about this is the sourdough bread.
To make the seitan patty meat you need:
- 1 cup vital wheat gluten
- 1/4 cup nutritional yeast
- 1 tbsp chickpea flour
- 1 tea sp onion powder
- 1 tea sp garlic powder
- 1/4 tea sp black pepper
- 1/2 tea sp cumin
- 1 tea sp vegetarian beef broth powder
- 3/4 cup water
- 1 tbsp Braggs liquid aminos
- 1 tbsp vegtable oil
- 1/2 tea sp liquid smoke
Mix all the ingredients together and knead the dough. Shape the dough into a log shaped roll. Wrap in cheesecloth and tie the ends off. Boil in vegetarian beef broth for 45 minutes.
Other ingredients you need:
- Sourdough bread
- Cheddar cheese slices
- Swiss cheese slice
- 1 small white onion diced
- 1 cup mayonnaise
- 3 tbsp ketchup
- 1 tbsp white vinegar
- 2 tea sp sugar
- 1 tbsp pickle relish
To make the sauce for the base of the sandwich mix together the Mayonnaise, ketchup, vinegar, sugar, and pickle relish. Set the sauce to the side. Saute the onions until golden brown and toast the sourdough bread slices. Use a bread knife to cut the cooked seitan log into thin slices. Pan fry the seitan slices and melt the cheese on top of them. To make the sandwich add the mayonnaise sauce to your bottom and top piece of bread and then layer on the onions. Add layers of your meat and cheese and top with bread.
