Easy Veggie Breakfast Casserole

This is great to serve on weekends and then you can eat leftovers during the week when you are too busy to cook in the mornings. It reheats well. The prep time is less than 10 minutes and then you just bake it. Super easy.
To make one 9x13 casserole you need:
Preheat the oven to 350 and lightly grease a 9x13 casserole baking dish. In a large bowl combine the diced veggies. Crumble the ground veggie sausage into small pieces and add to mixing bowl. Whisk the 12 eggs together in a separate bowl adding the salt and pepper.  Then add the scrambled eggs and shredded cheese and mix everything together well.  pour into casserole dish and bake at 350 for 45 minutes.
