This is a meal that can easily serve a large group of people. Very easy to make. Its great for parties or tailgating.
To make the beans:
- 1 lb dried red beans
- 6 cups of water
- 2 tbsp butter
- 1 large yellow onion diced
- 1 bell pepper diced
- 2 celery sticks diced
- 2 cloves garlic chopped
- 2 bay leafs
- 1 tbsp ground cayenne red pepper
- 1 tbsp paprika
- 1/2 tea spoon liquid smoke
Soak your beans overnight or do a quick soak. In a large stock pot melt the butter and saute the onion, bell pepper and celery until soft. Add the garlic, cayenne, and paprika then saute for another minute. Add the water, beans, bay leafs, liquid smoke and bring to a boil. Reduce heat and simmer for 2 hours. Serve over white rice.
