We use seitan in our meals quite often. It is a great protein source meat substitute and also an alternative to frozen soy-based products you might buy at the store. You can buy pre-made seitan at the store but it is easy to make yourself and homemade taste so much better. We will tweak the flavor profiles sometimes but most often we just start off with this basic recipe and then we change the flavor of it with a sauce or grilling glaze after the seitan is fully cooked.
For the Seitan Chick'n:
- 1 cup vital wheat gluten (we buy ours in bulk online)
- 1 tbsp chickpea flour
- 1/4 cup nutritional yeast
- 1 tbsp vegan chicken bullion base
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp white pepper
- 1 cup water
- 1 tbsp vegetable oil
- 1/2 tsp soy sauce
Knead all of you ingredients together and form into a flat piece of dough the shape of your small baking dish. We use a square glass 8x8 casserole dish. Cover the dish in foil for easy clean up. Then bake the seitan at 350 degrees for 35 minutes.
Allow to cool after baking then you can remove from your pan. Once it is cooked you can then put it on the grill as a whole slab or go ahead and slice or chop up however you would like to serve. We use a bread knife to slice.
