We had some leftover chicken seitan so decided to turn it into chicken salad.
For the salad you need:
- 2 cups chopped chicken seitan
- 1 cup grapes
- 3 radishes
- 1/4 cup chopped pecans
- 1 tbsp chopped dill
- 1 tea sp Dijon mustard
- 1/2 tea sp black pepper
Finely chop the seitan. Cut the grapes into quarters and chop the radishes into small pieces. You want everything to be chopped into small pieces of similar size. Mix all ingredients together well.
