If you love a huge sandwich this is for you! This is about as close as you can get to the taste of a real Cuban sandwich without the real meat. I love Cuban food. We served this sandwich with plantains and mojitos. It makes 2 to 4 sandwiches depending on how hungry you are. We make it into two sandwiches but we can never finish them. They are way too big. It is really easy to make if you have pre-made your seitan.
To make you need:
- Basic Seitan - to changed the flavor profile of the seitan to make it taste more like ham than chicken we add in a tablespoon of maple syrup before baking the seitan.
- Tofurky Pepp'roni slices or soy chorizo (we have made both ways both are good pepp'roni is easier)
- Field Roast Chao Slices
- Loaf of bread
- pickle slices
- mustard
Slice your bread open and spread on a thick layer of mustard. Add a layer of Chao Slices and top that with your Pepp'roni or chorizo. Both options work well if you go with soy chorizo just brown in a skillet first that's why the Pepp'roni are easier because you can just layer on but whatever you can buy easily will work. Then add a layer of thinly sliced seitan and top with pickles and more Chao. Wrap your sandwich completely in aluminum foil then heat on the grill or in the oven just to warm the bread and to melt the Chao. If you have a cast iron skillet place it on top the wrapped sandwich while warming it to make it a pressed sandwich.
